Ginger Baked Chicken Pieces 姜茸烤鸡片



Sometimes I just feel soo lazy to wash up after cooking.

Initially I wanted to steam the chicken and then cook the sauce to pour over, but the lazy bug hit me the last minute and I dumped everything in and baked it instead. Reducing a lot of washing up. I used just one bowl for marinating and another dish for baking. But if you want, just use the same baking dish to marinate. Even lesser to wash, haha!



Easy Ginger Baked Chicken Pieces 姜茸烤鸡片

500gm Chicken
Sliced green onions and coriander for sprinkling

Marinade
2 heaped Tbsp minced ginger
1 tsp minced garlic
2 Tbsp minced white part of spring onion
2 Tbsp light soy sauce
1/4 tsp salt
1 tsp sugar
1 tsp sesame oil


1. Chop chicken into smaller pieces.
2. Mix with marinade. Rub and gently 'squeeze' the ingredients onto the chicken.
3. Arrange chicken in baking dish, single layer
3. Put into oven , temp 180(fan)/200C, then turn the power on and bake for 20-25 minutes, until the chicken pieces are cooked.
5. Sprinkle with green onions and coriander

    Would it be ok if i use chicken fillet? Just worried whether it will become dry... or need to cover with aluminium foil?

    Add some oil to the marinade. This dish does have a bit of gravy from the natural chicken juices, just don't overbake.

  6. Hi Wendy. I have some drumsticks and planning to use them for this dish. Any tips of how to chop drumsticks to bite sized pieces? I tried using cleaver to chop but it ended up with many broken small pieces of bones making it very difficult to eat.
